Ma! Officina Gastronomica
Ma! Officina Gastronomica is a small mountain workshop with a great love for nature and the territory. We produce small batches of artisan cured meats and jams with raw materials that transmit the scents and flavours of the valleys that surround us. We process all our products by hand, as has always been done in these places, so that we can transmit their essence, and the unique flavour of genuineness. Sustainability is a way of life for us. It is respect and gratitude for what we can harvest from nature. And nature guides us in our choices, starting with the raw materials.
The meats we select for the production of our artisanal brisaola and cold cuts are carefully chosen from small breeders in the province of Sondrio and Europe, who do not use intensive methods, but respect strict animal welfare standards. The fruit and vegetables we use in our jams and preserves come from the surrounding forests and local crops. They sprout and ripen at high altitudes and we process them with delicate processing and a few simple ingredients to retain and enhance their natural flavour. Places are a distinctive and recognisable signature of the products that come out of our Officina Gastronomica.
The mountain air favours seasoning without the use of chemical additives. The fresh winds help the precious moulds that contribute to the creation of our artisan cured meats. The spices and natural aromas we use speak of us and represent the search for ancient flavours that connect past and future of places where time flows at different rhythms.
